perfect grilled cheese

oftentimes, the answer to a long day is almost always lots of melted cheese between two perfectly grilled (and buttered) pieces of bread. the best part about a grilled cheese is you never really need a recipe, and let's be honest, you never really need an excuse. am i right?

the best thing you can do for yourself and your perfect grilled cheese, is... don't skimp on the cheese. for this mountain of melted glory, i used a blend of shredded cheddar, swiss and my all time grilled cheese staple and favorite, gruyere.  oh, also. don't skimp on the butter either. i mean, you're already making a melted cheese sandwich, you might as well go all out right? use. real. butter. and. lots. of. it. 

here's what you need

  • 2 slices of good bread (your preference, sourdough, rustic italian, ciabatta, sky's the limit)
  • 1-2 tbsp butter, softened
  • shredded cheddar cheese
  • shredded swiss cheese
  • shredded gruyere cheese

here's how to do it

the key to achieving a golden crust, with gooey cheese and not burning the sandwich, is to heat your frying or grill pan to low-medium heat and let each side slowly toast. spread the softened butter on the outsides of each slice of bread and when pan is ready, place one slice, buttered side down. add the cheese in an even layer on the bread and top with second slice, buttered side up. 

when the bottom slice has reached a nice, golden crust, master your flipping skills and carefully flip over. when the second slice is also perfectly golden, you've just made melted heaven and are ready to dive right in. (i won't blame you if you eat it straight from the pan)... enjoy!

april showers bring may pancakes. that's how the saying goes, right? well, being just less than a week away from mother's day it sure does. If you're anything like me, you strive to make certain that your mom knows just how much you love and appreciate her on this one day (but let's be honest--it really should be every day!) i know my mom deserves the moon for all she does, and i only hope one day i can live up to the example she's set. so, without further adieu, here is a recipe that has been adapted from my own family recipe to include the most incredible addition of raspberry preserves thanks to the good folks at bonne maman, and is sure to knock mom's socks off next sunday.

ahh, summer. the season that's synonymous with things like sun, citrus, vacay, (most recently, yes way rosé) and most of all, grilling. it's an activity that brings everyone together, because, let's face it--we all love food. even if you don't know how to grill, have no fear. there are many ways to achieve summer superstar status with this no-frills flank steak and (very easy) blackberry chimichurri, that can virtually work on any type of grill or grill pan that can achieve high heat.
